Paneer & Aubergine Curry

This aromatic curry is one of our favourites, the aubergine & paneer are delicious together and the peas & cherry tomatoes give a vibrant colour.  Who needs a takeaway when you have this in your freezer!

We love to serve this with sticky coconut rice and scatter over some extra coriander, fresh chilli & serve with a dollop of yoghurt.
