This session we’re talking about the wonderful world of potatoes.  There are so many vaiations that if we were only allowed to eat one vegetable for the rest of our lives, yup you’ve guessed it, it would be the potato.

Session 3: Potatoes

The potato popularity has fallen over the years due to the interest of low carb foods. However they are incredibly healthy – loaded with all sorts of important vitamins & minerals.  Potatoes are an excellent source of potassium, a nutrient most people don’t consume enough of, which can help regulate your blood pressure. They’re a good source of vitamin C & vitamin B6, which aids your nervous and immune systems.

Basic principle;

There are so many different ways to cook potaotes but one of our favourite options are roasted baby potatoes with balsamic & rosemary.

Use a deep tray & pop the baby potatoes in. Cut up one red onion to half-moon shapes & add to the tray. Drizzle with olive oil & balsamic vinegar & sprinkle with salt & pepper.  Roughly chop some rosemary & add this to the tray too.  Roast for 35-55 minutes at 200 until the potatoes are soft in the inside & crunchy & golden on the outside.
