Watermelon, Feta & Pine Nut Salad

With this hot weather we don’t always feel like eating a big lunch, this recipe is a super easy & really freshreshing.   It can be served as an accompinament or as a main dish.

SERVING SIZE: 4 people

INGREDIENTS

1/4 large watermelon
200g feta
Packet of black grapes
50g pinenuts

METHOD

  1. Cut the watermelon into small chunks
  2. Cut the feta into similar sized cubes
  3. Add the grapes
  4. Toast the pinenuts in the oven for approximately 5 minutes or until golden.  Leave to cool.
  5. Mix all together & serve

What dishes should I try this with?

We love eating this as a main but it works well with our shredded beef chilli, either the beef or veggie lasagne  and smoky cauliflower & carrot dahl.
